Tuna melt & Southwestern Veggie soup
It's raining. That might not be a big deal to most people, but rain = pain to me. When it rains, the bursitis in my knees flares up something fierce. Since I did my 30 minutes on the treadmill today anyway (ouch!), and am about to go grocery shopping (I usually hit 3 stores, so I'm on my feet for awhile) I didn't want to spend lots of time on my feet cooking dinner. So I made tuna melts and cracked open cans of soup. For the tuna melt I just mixed 1 can of solid white tuna (3 points) with 2 tbsp Hellman's Canola Oil Mayo (2.5 points) and added some chopped celery. Then, using my George Foreman grill, I made a grilled cheese using 2 slices of light wheat bread and two pieces of Weight Watchers singles cheese (3 points for the grilled cheese). No butter or oil necessary on the outside of the bread. Then, when it was done (2 minutes) I opened up the grilled cheese and put the tuna in. YUM!
This is just a can of Healthy Choice Light Southwestern Vegetable Soup. (1 point for the whole big can!) It wasn't the best veggie soup I've ever had, but especially considering it was only 1 point, it wasn't bad.
