Grilled teriyaki chicken & twice baked potatoes
If anyone tells you you can't eat YUMMY things on Weight Watchers (because everyone knows you can only eat stuff that tastes like carboard if you want to lose weight) just send them to me. I'll give them a tour of my kitchen cabinets/refrigerator and set them straight. Tonight we had my Mom over for dinner. We liked the grilled teriyaki chicken breast we had last weekend so much that we made it again. I paired it with Weight Watcher-ized twice baked potatoes. Here's a shot of them before I put them in the oven for the second time.
I just took large potatoes (3 points each) and baked them. Then when the skins were cool enough to touch, I cut them in half and scooped out the insides. I put all of the insides of the potatoes in a bowl and mixed in 3 tbsp Light Smart Balance (1 tbsp per person = 1 point per person), 6 tbsp light sour cream (1 point per person), 1 1/2 ounces of shredded Cabot 75% reduced fat cheddar cheese, and some salt & pepper. I mixed that up well and smashed it all up with a potato smasher. Then I refilled the potato skins, and added 1/2 an ounce of the Cabot cheddar to the top of each potato. The cheese came to 2 points per person. (so one whole potato was 7 points)
The chicken was 5.5 points. We also had some camera shy salad & corn on the cob. And as it happens, we were talking when I served dessert, so I totally forgot to take a picture of it. It was good too! Dessert consisted of a 1 point Vita-muffin Brownie, topped with a 2 point cup of chocolate fudge brownie Weight Watchers ice cream, rounded out with a couple generous tablespoons of whipped cream on top for good measure. An 18 point evening all told, but it's the end of the week, I definitely had the points, and I knew my Mom would enjoy it. Ok, ok. I knew we'd enjoy it too. So sue me.
