Shrimp veggie "lo mein"
Well ladies, I had myself a treat tonight. FRANK COOKED. Yep. You heard me right. I married a man who can COOK. (and not just on the grill) Frank is really a very good cook - he just doesn't do it often enough to suit me. :) Anyway, at Hungry Girl's suggestion, we tried Tofu Shirataki noodles. An 8 oz. bag is ZERO POINTS. For serious! And if you drain them well, then cook them in a dry pan for several minutes until the liquid has cooked out of them, they're pretty good! (soggy tofu doesn't appeal to us in the slightest) The funny thing is that Frank told me they smell like wallpaper paste when they're cooking. Ha! But they didn't taste like it. The texture is a little chewier than pasta, but for 0 points, we can totally overlook that. Like regular tofu, they absorb the taste of whatever goes in/on them, so they're the newest additions to our "yum list". So far we've only been able to find them at Price Chopper on East Mountain St. in Worcester, but I plan to call the Hannaford in Leominster to see if they carry them. You can also find them at Whole Foods stores.
So, on top of the noodles, there is red bell pepper, zucchini, onion, carrots & broccoli cooked in crushed garlic, oyster sauce, & soy sauce, and on top of that is 5.5 ounces of cooked shrimp. (16 oz of raw shrimp cooked down to 11 oz) All told, a 7 point supper. Happy, happy, happy! :)
So there were plenty of points left for a brownie sundae. Like the ones I made last night, I used a 1 point Vitamuffin brownie, with a 2 point cup of Weight Watchers chocolate fudge brownie ice cream, and topped it with about 1/3 cup of whipped cream (from a can) for 1 point. It's not the greatest picture, but you get the idea. What would make it perfect is if I could find a chocolate fudge sauce that's 0 points for a couple of tablespoons. Hey, a girl can dream... :)
