Salad, smoothie & egg scramble

This is officially my favorite lunch ever. A nice big salad and a banana/pineapple smoothie. I ate this after doing 40 minutes on the treadmill - nice and healthy and oh, so yummy!

Frank had rehearsal tonight, so I was on my own for dinner. I cooked up 2 of the veggie Italian Sausage links, then removed them from the pan, wiped it out, re-sprayed it, and sauteed some shredded carrots and chopped onion. Once that was done I added a cup of egg beaters and 2 wedges of Laughing Cow Light Swiss Cheese. Then I cut up and added the sausage. It made a pretty hearty scramble, let me tell ya! I added a light, mulit-grain english muffin with Light Smart Balance, as well as a small salad on the side, and had myself a VERY filling 12 point supper.

However, there is always room for dessert. This sugar-free pudding cup is only 1 point. (the 2 tbsp of whipped cream from a can added 0 points) Yum! If I need a snack later (doubtful, but you never know) I'll have an organic Jazz apple. Jazz apples are my new 'discovery'. They are REALLY good! :)
