Cheesy Zucchini Casserole

Tonight's dinner was from a recipe I saw on someone else's food blog. You can find the link to the original recipe at the bottom of this post. I just "Weight Watcher-ized" it.

This comes to 10.5 points for half of the casserole, or 5 points for 1/4 of it. I'll detail the changes I made to the recipe below. Anyway, we both loved it - so there's another recipe for our "It's a keeper!" list. (of course we had this with salad, but then that kind of goes without saying now, doesn't it?) :)


Original Recipe:
4 slices bread
1/4 c. melted butter
2 c. cubed zucchini
1 large onion, chopped
1 tsp garlic salt
1 egg, beaten
2 c. shredded cheddar cheese
My changes:
8 slices Light Wheat Bread (35-40 calories per slice)
1/4 c. melted Light Smart Balance (made w/ olive oil)
3 c. cubed zucchini
1 med. onion, chopped
1 tsp garlic salt
3 tbsp egg beaters (you could use egg whites, instead)
2 c. shredded Cabot 75% Reduced Fat Cheddar Cheese
