Grilled eggplant sandwiches

I made grilled eggplant sandwiches last night. I used my George Foreman grill. I seriously LOVE that thing! (we each had two sandwiches - we were hungry and they're pretty light)

On the top part of a whole wheat bulkie roll (3 points for one roll, 7 points for 2), I split 1/3 c. cut up roasted red peppers (.5 point) between two sandwiches, drizzled a tsp of balsamic vinegar over each, and placed a couple of basil leaves over them. (we decided that it would be better with only one basil leaf in the future - fresh basil is very strong)

On top of that I placed one slice (roughly 1/2 " thick) of a medium sized eggplant, grilled, (0 points) on top of each sandwich, then put 1/8 c. shredded part skim mozarella (made with 2% milk - 1 point) on each piece of eggplant, and 1/4 of an ounce shredded parmesan (.5 point).

I topped that with one more piece of the hot (to melt the cheese), grilled eggplant (still 0 points) and put the sandwich together.

It was VERY tasty! 4.5 points for one sandwich, and 10.5 points for two.
