Taco Tuesday


Only one picture tonight. Taco salad doesn't really need all the steps photographed. :) I browned a package of ground turkey breast, then added some water and a packet of 40% less sodium taco seasoning. Once that was all cooked up, I divided it between the two of us. I served each portion of meat over 1 1/2 oz. of baked tortilla chips, and 2 oz. of 75% reduced fat Cabot cheddar cheese. (I had to shred that myself - it only comes in blocks) Add some lettuce, halved grape tomatoes (most of my tomatoes are on the bottom in this picture), salsa and 3 tbsp light sour cream, and viola! Weight watcher-ized taco salad. This bowl was 11.5 points, and VERY hearty. :)
