Smoothie & salad w/chicken

Everyone's been making smoothies lately, so I started craving one myself when I needed a cool, mid-afternoon snack today. Of course now that I've had one, I'm going to have to have them more often. (isn't that usually how these things go?) This one was 4.5 points, but it actually made a good bit more than this (20 oz glass), which I drank in the kitchen before bringing the rest (pictured below) into the living room to relax with. I used 1 container of Pineapple & Coconut Light & Fit yogurt (1 point), 1 cup of skim milk (2 points), 1 small banana (1.5 points), 1 tsp (imitation) vanilla flavoring, and loads of ice. I dumped it all in the blender and let 'er rip. Other than wishing I had some fresh pineapple in the house to add to it, this was practically perfect in every way. Like Mary Poppins.

It was hot & humid today. Totally sucked the energy out of me, so I didn't cook anything for dinner. I got a couple of these Short Cuts a few weeks ago on sale and threw them in the freezer for just such an occasion. Frank & I each had our own package (only 7 points for the whole thing!) on top of a big salad. We also had a little of the Brown Rice, Corn & Black Bean Salad leftover from Sunday's dinner.

YUM! I'm seriously loving salad. Which is really pretty weird for me because for YEARS, Frank had to practically beg me to make salads. But I figured, why make salad when I can make a huge pan of homemade mac & cheese instead? I was so bad.

I REALLY like Weight Watchers. I'm not kidding. I have learned SO much about food, portions, nutrition, etc. in the year+ that we've been doing this. Knowing what I know now, I can't believe that I ever found the way we used to eat acceptable. I must have been out of my freaking mind.
