Te Quiero Tequila Shrimp with Brown Rice, Corn & Black Bean Salad
This is the "Te Quiero Tequila Shrimp" recipe that was in Hungry Girl's Friday newsletter. I doubled the whole recipe though. Shrimp weighs much less when it's cooked, so if I had cooked 8 oz of shrimp for two people, we would have wound up with only about 2 1/2 oz each. Still, half of this pan full of shrimpy, tomatoey, tequila/limey goodness rang in at only 6.5 points. :)
This is the Brown rice, corn & black bean salad from the "Main Dish salads & Side salads" section of "The Complete Weight Watchers Cookbook". It is SO freaking good. Really. It's such a perfect summer side dish. It's not 'heavy', but it's filling. And the lime juice and cilantro give it such a light, summery flavor. (this recipe is doubled - I wanted leftovers for lunch this week!) It is... (drumroll please)... ONLY 2 POINTS FOR ONE CUP! For serious. I wouldn't kid you about something like this.
