Lean pork loin is almost as low in points as turkey breast, so I make it more often now than I used to.
We like Claussen pickles, so we almost always have some in the house. I saved the pickle juice from the last jar we had until there was another jar of pickle juice I could add to that. Yesterday I noticed that there was only one pickle left in the currently open jar, so I pulled some pork loin out of the freezer for tonight's dinner.
Early this morning I put the defrosted pork loin, along with both jars of pickle juice and two 8 oz. cans of plain tomato sauce, into the crockpot. Claussen seasons their pickles with lots of garlic so any additional seasoning really isn't necessary in the crockpot. I put it on high for couple of hours just to get it going, then I turned it down to low. By suppertime the meat should be falling apart. I'll serve the meat and some of the almost-BBQ-ish tasting sauce over a cup of brown rice, and we'll have some salad on the side. Yum. :)
Believe it or not, 8 oz of the pork loin + 1 cup of brown rice is only 8.5 points. The salad is 0 points, and we use 0 point salad sprays. You can't beat that with a stick! :)
